Healthy Pina Colada! (L@@k at the yummy photo!)

Pina Colada CAKE, that is! Sorry, if you were expecting a cocktail recipe. You wont find those here. Those are not healthy, but you knew that. :wink:

Skinny Pina Colada Cake

Prep time: 1 hour

Cook time: 30 minutes

Yield: 12 servings

Serving size: 1/12 slice of cake

Ingredients

1 white cake mix, dry mix only

1 - 20 oz can diced pineapple

1 cups unsweetened almond milk

2 tsp coconut extract

3/4 cup erythritol or you can use sugar*

1 - 8 fluid oz Cool Whip Free

1/2 cup sweetened coconut

12-16 maraschino cherries (optional)

*Optional ingredients are not included in nutritional calculations

Instructions

Start off by making condensed milk. You can make this ahead of time and store in the refrigerator if needed.

In a small sauce pan over medium heat, add unsweetend vanilla almond milk and erythritol or sugar.

Bring almond milk to a boil and turn heat to low and let cook for 1 hour uncovered, stirring occasionally.

After almond milk has simmered for 1 hour, remove from heat and add coconut extract and set aside.

Preheat oven to 350 degrees. Spray a 9x11 cake pan with nonstick cooking spray.

In a large bowl or using a stand mixer bowl, add white cake mix and can of pineapple (do not drain).

Mix cake mix together over medium for 30 seconds to 1 minute to mix well.

Transfer cake mix to pan and bake in oven for 30 minutes until knife inserted in center comes out clean.

Allow cake to cool and then using the handle of a spoon or large straw, generously poke holes.

throughout the entire cake, making sure to poke cake evenly. Pour almond milk mixture (condensed milk) over cake evenly, making sure almond milk (condensed milk) covers cake and seeps into holes.

Top cake with Cool Whip Free topping. Sprinkle coconut on top and add cherries.

Store in refrigerator before and after serving.
