Here is what we had for dinner tonight along with a bit of lean steak (with a bit of goat cheese on top!) Technicolour Summer Salsa 3 ripe medium tomatoes, finely chopped ½ cup finely diced red onion ½ cup finely diced yellow bell pepper ½ cup finely diced orange red pepper 1 cup diced zuchinni 1 garlic clove, crushed 1 jalapeno pepper, halved, seeds removed, flesh finely chopped ¼ cup fresh cilantro ¼ cup fresh lime juice 1 tsp ground cumin 1 tsp sugar Salt to taste Place all the ingredients in a bowl and gently toss to combine. Cover and store in the fridge until needed. Can be made a few hours in advance. Gently toss the salsa before serving with tortilla chips (whole wheat if you can find them). You already know from my earlier posting here that I'm a salsa-lover, but what you didn't know is that I also love zucchini and since I just happen to have all the ingredients in your Technicolour Salsa (including home-grown cilantro), manana will be salsa-making day for me!
