Let's have some fun and share some recipes at the same time. Let's cook a cyber dinner for all of our friends here at LCSC!!! Today, I will prepare the drinks and others can make the appetizers, bread, salad, main entree and dessert.

So...here goes....................

Ding-a-ling

This is a very smooth drink, it will give you a real kick.

Recipe

1 ounce CHERRY brandy (not cherry whisky)

1 ounce vodka

Pour over ice and sip.

A cheese spread to go with the ding - a - ling

8 oz cream cheese

4 oz shredded cheddar cheese

1/4 tsp. curry.

Mix together and form a mound.

Pour 1/2 jar mango chutney over cheese.

Sprinkle with:

Chopped pecans

Craisins

Chopped green onion

Serve with water crackers or your cracker of choice.

I will make Texas Caviar... its what everyone requests me to bring to gatherings..

Texas Caviar.

1 can white shoe peg corn, drained

1 can black beans, rinsed and drained

1 can black-eyed peas, rinsed and drained

1 bunch of green onions chopped

1 green pepper-chopped

1 red pepper-chopped

3-4 stalks of celery-chopped

1 jalapeno-chopped (seeded if you want less heat)

1 jar of pimentos-drained

mix all above in a bowl

then BOIL

1/2 cup veggie oil

1/2 cup cider vinegar

1/2 cup sugar

salt and pepper

let cool and pour over veggies

refrigerate overnight (can be served right away)

Serve with Frito Scoops

Alright, I will prep the main meat dish but will need veg and a starch to go with it. This one is so easy and company worthy. Just need to make sure you have the chicken defrosted, pounded and marinated in advance. Everyone in my family loves this and it is company worthy. And you never seem to be able to ruin it when cooking it. The marinating always makes it moist and delicious!

Spicy Grilled Chicken Steak

4 boneless skinless chicken breasts

3 tbsp olive oil

1 clove garlic, minced

1 tbsp Dijon mustard

1/2 tsp salt

1/4 tsp pepper

1 tbsp lemon juice

pinch hot red pepper flakes

1) Place each piece of chicken between 2 sheets of waxed paper or parchment paper. Pound chicken with a meat cleaver until about 1/2 inch thick.

2) Combine oil, garlic, mustard, salt, pepper, lemon juice and hot pepper flakes.

3) Add chicken to marinade and coat well. (I always pour marinade into a ziploc bag and then add chicken and coat). Refrigerate for up to 4 hours.

4) Heat heavy skillet, grill pan or BBQ. (We always use BBQ). Brush lightly with oil. When pan is very hot, add chihcken. Cook about 3 mins per side. Let rest for a few minutes and serve.

ummm... I dont know really... its kinda a light yellow colored corn. I can only find it in here in the Green Giant variety.

what wikipedia says:

Shoepeg corn is a variety of white sweetcorn valued for its sweetness. It is characterized by small, narrow kernels that form uneven, tightly packed rows on the cob. The kernels are small, narrow, and white in color with a sweet, mild flavor. Shoepeg corn is also known as country gentleman corn.
