KatieB Posted May 30, 2012 Share Posted May 30, 2012 Chayote and Mozzarella Cake (therapeutic/dehydration) Cuisine: Fruit Course: Dessert Therapeutic: Dehydration Ingredients: Chayote is a green vegetable from Latin America called 'guisquil". It has high content of water, therefore great great for rehydration. The fruit is digestible and provides a good source of calories. Chayote 2 Mozzarella cheese, fresh 1 ball Egg (whole) 1 Flour 1 cup Bread crumbs 2 cups Salt and pepper to taste Steps: Boil the chayote (whole) in water until soft and tender, allow to cool Cut the chayote and mozzarella cheese in matching slices of 1/2 inch each. Build the cake to desire height. Prepare a breading station: Place the flour seasoned with salt and pepper and place in a medium sized bowel. Beat the egg in another medium sized bowel. Place the breadcrumbs on another medium sized bowel. Flour the chayote and mozzarella cake stack well all around. Brush on egg mixture. Generously cover with bread crubs. Deep fry at 325oF until golden brown.
