  3. I'm so envious that you have the energy to do this! Way to go! I just heard a radio interview yesterday with a man that is getting ready to hike the entire Applachian Trail. He said he will probably lose 50-65 pounds by the time he is finished. He's planning on walking 12 miles a day.

    Yummmmmmmmmmm

    I have to share this recipe with all of you. My soon-to-be DIL made this last night and I can't begin to tell you how wonderful this dish it. This recipe is one of our local radio hosts' favorites. Enjoy. Jim's Penne Alla Vodka Ingredients: Salt 1 cup finely chopped onion 2 tablespoon garlic-infused oil 1 28-oz can plum tomatoes -or- 3 cups finely chopped fresh tomatoes 2 tablespoons heavy cream Hot Italian sausage, cut into discs 2 lbs penne noodles 1/2 cup vodka 4 tablespoons butter Grated Parmesan/Reggiano Directions: Boil a large pot of water, lightly salted. In a large saute pan, fry sausage, set aside and drain on paper towels. In another pan, add oil, onion, and a little salt. Saute onion until soft and beginning to caramelize, about 10-minutes. Add tomatoes and their juices, simmer for 15-20-minutes. Add heavy cream and remove from heat. Cook penne until al dente, drain and return to cooking pot. Add vodka, butter and salt to the drained noodles. Gently mix until butter is melted. Add tomato mixture and mix until pasta is coated. To serve, transfer pasta and sauce to a large warmed bowl. Pass the grated Parmesan for the guests to serve themselves. Yield: 8-10 servings.

  10. I am so very sorry that you are once again dealing with this horrible disease in your family. I am a firm believer that each patient should be allowed to make up their own mind about treatment options. I also believe that as family and friends, we must give our loved ones our feelings and opinions and then let them choose from that point. Patients all react differently and your mom may have a much easier time dealing with treatment that your dad. I would try and emphasize that to your mom. As you all to well know, it is very hard watching a loved one battle cancer. After watching my husband fight for his live and suffer through treatments, I have to say that I would decline treatment if diagnosed. I will be keeping you and your mom in my thoughts and prayers.

  15. Melanie...I can really "feel" your pain from reading your posts. The combination between your post and Carleens really brought tears to my eyes. A few months after Dennis died, I found a tape recording that I had completely forgotten about. The tape was running while he was on a couple of phone conversations, making plans for us to get together with friends. He sounded so happy on the tape. That day seems like a lifetime ago. I also have a few video tapes of him, which I will always cherish. Like Carleen, I spent so many nights just memorizing every detail about his face, hoping I could somehow etch those memories in my mind forever. So mnay times, I just wanted to freeze time. My heart is with you. I know the pain you are feeling. I think you should plan your own memorial - with or without his family. This should offer you a bit of closure. I pray things get better for you.
  16. I love this one and use it at least twice a week, as onion odors seem to really "cling" to my skin. After cutting onions, grab a stainless steel spoon and turn on the faucet (cold water). Under the running water, rub your hands on the spoon. This gets rid of all the onion smell.
  17. Beth, so glad to hear that this difficult task is behind you. I know Bill is so proud of you and the way you are handling things. I still have to scatter Dennis' ashes and keep finding reasons to put off doing so. I know this was a hard step for you to take. Have fun on Monday!!!

  23. I suppose I'll jump in on this one. As most of you know, I have been having massive problems in dealing with my boss. I have worked all of my life and have always had a work situation that was a good one. This job is unbearable but the $$$ is good, so I stay. Had Dennis been alive, I would have been gone long ago. Now, I have this new feeling that is all about being dependable and frugal, as I am supporting myself and my challenged son that lives with me. I'm just afraid to take the plunge and give up the security that this patcheck offers. Now...how to deal with this. Easy to say... 1. I need to stop being afraid and update my resume. 2. I need to fax my resume to everyone that will read it and be firm in my salary request. I tend to always be one that will negotiate, even at my own expense.
